Four are the main ingredients of our artisan pasta:

1) wheat: we produce it in Sicily, on our lands in Caltagirone (CT), without herbicides, without GMOs;

2) water: very pure and constantly monitored to bind perfectly to the semolina;

3) drying: slow and at low temperatures to preserve the wheat’s nutrients;

4) air: we are immersed in the green Albenga plain, far from the city and exhaust fumes.

Our pasta is made with respect for nature. The long preparation process is the old-fashioned way.

We prepare small quantities of pasta for each production cycle, but it is always "a special pasta". This allows us to focus on pasta quality, which is of a high standard, delicate to the palate and porous in appearance, able to perfectly amalgamate any type of sauce and bind well with the most elaborate sauces, but also to be fully enjoyed with a simple drizzle of oil, which is the most difficult challenge for any type of pasta.
