Tuna ragout prepared according to the old traditional Sicilian recipe. Great for seasoning your dishes

The tuna is cooked in water and salt, and not steamed, so that its organoleptic qualities remain intact and most of the protein is not lost. After cooking, the product is cooled and a meticulous skinning and removal of the bones is carried out manually. The cleaned slices are then cut into fillets and subsequently processed to create a classic sauce of Sicilian tradition ready to be combined with the preferred pasta format.
