GLUTEN-FREE, PRESERVATIVE-FREE

It is so called because once, in ancient times, the red-fleshed capon fish, known as lampuga, was cheap, much cheaper than meat, and could be found all year round in large quantities. The poor, the less well-off, cooked it with fried vegetables, and preserved in vinegar, with sugar, (the sweet and sour) acting as a preservative. Then the fish disappeared and the sweet and sour fried vegetables remained.

We have kept the original recipe: we fry ingredients one by one, and after sanitising them in sweet and sour, we mix them with a special sauce, which serves to bind the product, using only certified Italian extra virgin olive oil. It has very wide use in both the ready-made sauces and the side dishes sector.
